After the holidays, you may want to start 2010 with a lighter fair, good for you and great tasting.

SHRIMP STIR-FRY
4 tsp healthy oil of your choice
3 tblspoons low salt soy sauce or teriyaki sauce (or sauce you like)
4 cloves of garlic (more or less)
1-2 pounds medium peeled and cleaned fresh or thawed frozen shrimp
2 tblsp minced fresh ginger
1/2 pound white mushrooms cut
4 scallions in pieces
1 red or yellow pepper
snow peas
red pepper flakes if you like it hot/spicy

Mix quickly together oil and sauce and garlic in large bowl.  Add shrimp, toss to coat.

Use a wok or skillet and spray with cooking spray, have heat on high.  Add shrimp and cook until pink, about 2 minutes.  Put on a plate

Heat the rest of the oil in the same pan over high heat, add ginger and cook 30 seconds

Add the rest of the vegies, cook 'til crispy, tender.  Stir in the shrimp and remaining sauce.
